<p>Good Friday being a strict day of fasting and consuming of vegan food only, this BLT-inspired sandwich came together easily and quickly. Mustard (any kind as long as it’s dairy-free) can replace vegan mayonnaise if you prefer. <p>From Alpha Bits’ cafe located in Mapleton, Oregon. This soup reminded me of a simplified version of Thai yellow curry. I played with some of the ingredients, added couple things and cleaned up the direcitons. You can use any kind of mushroom-for us it’s usually cremini or oyster mushrooms but for this soup recipe we tried Oregon harvested ‘hedgehog’ mushrooms. Fast and easy to make! Note: [some] types of curry paste contains ghee (butter). Yield with original recipes says this serves four but I think it’s closer to two servings-perhaps three servings at most. And in conclusion-after preparing this soup I decided next time to add a protein: 1 cup firm tofu cut up into small cubes and sauteed with the carrots, onions, etc. For the carnivores, add 1 cup cooked chicken, cubed when you add the green beans and asparagus. <p>This is a variation of Aloo Gobi; a Punjabi classic made with potatoes (aloo) and cauliflower (gobi), however I have omitted the potatoes to lighten up on the carbs. I love Indian food because it’s inexpensive and relatively simple to prepare, but more importantly, it never fails to light up my eyes, nose and tastebuds with its piquant flavors and vivid colors. This dish is filling, without being a total carb bomb (sans potatoes) and the leftovers are good for a couple of lunches during the week.The combination of cauliflower and green peas may not sound like much, but they happen to be the perfect canvas to paint on the vibrant flavors of ginger, garlic and onions. The turmeric does it’s part by imparting a golden hue to the cauliflower contrasting to the green peas, making this dish look exciting. Indian food is all about the use and combination of spices for amazing flavors. <p>A take on beef & Guinness stew, adapted from a version found on about.com. If you’re a huge fan of stout, use two full bottles/cans and don’t bother with the broth. This was originally meant to use seitan, but as I stay away from wheat, I’ve used tofu instead. You can use either in exactly the same way, maybe even tempeh. I prefer to leave out the potatoes and serve over mash instead, but others might prefer as is with some crusty bread on the side. I’m sure any dark beer would make a good sub for Guinness if you have to. As a point of interest, Guinness brewed by Moosehead in St. John NB is vegan, labelled Guinness N.A.
