I was really curious to try green lentils for a while; I was mostly familiar with brown and red lentils but saw that green ones were usually pricey. I was able to get some bulk for cheap and was pleasantly surprised with their taste and texture. They’re also pretty to look at! This is a super simple side dish for 2-3 people; can be easily multiplied if cooking for your family/a crowd. This goes great with some couscous or quinoa.
